Six hundred and twelve smallholders deliver cherry to the Gathaithi factory, a tin-roofed washing station above the Chania river. We have bought from them every year since 2018. This lot is the sharpest we have had: blackcurrant on the nose, tamarind through the middle, and a finish like sugar cane you have just snapped in half.
01 — The range
We keep the list short on purpose. Two seasonal single origins, two that hold their place through the year, one blend for the espresso machine and one decaf we would happily drink at breakfast. Everything is 340 g, whole bean unless you tell us otherwise, stamped with the day it left the roaster.

02 — Subscriptions
Every subscription bag is roasted the morning it ships — Tuesday or Friday — and posted the same afternoon. Skip a delivery, change the grind, swap the coffee, or stop entirely from one page. No contract, no cancellation email you have to write twice.
One 340 g bag, every other week
For one devoted drinker. We choose the lot, you get the story card — and you can veto anything you did not love.
Two bags, monthly
The one most households land on: one filter single origin and one bag of Ankeny Blend for the machine on the counter.
Three bags, every other week
For the household that grinds twice a day, or the office that finally gave up on the pods in the cupboard.
Gift subscriptions available in 3, 6 and 12 month lengths · First shipment leaves within four days of ordering
03 — How we roast
Nothing here is a secret. The difference between a good roast and a forgettable one is attention paid in the same places, every single batch, for twelve years.
Every sample is scored blind, three times, on three different days by three palates. Anything under 86 goes back with notes. In 2025 we tasted 419 samples and bought 31 of them.
Priya builds twelve 100 g profiles per lot on the Ikawa, chasing the version of the coffee that tastes most like itself. The winning curve gets scaled, not copied.
Merlin, our Loring S15, does the work: closed-loop air, no afterburner, roughly 80% less gas than the drum we started on. Junco, a 1971 Probat UG-22, still handles the small reserve lots.
Four days of degassing before a bag is sealed. Kraft, one-way valve, nitrogen flush, roast date stamped by hand — not a best-before eighteen months out.
Subscriptions roast Tuesday morning and Friday morning and leave for the Hollywood District post office at 4pm the same day. Portland orders go out by bike inside I-205.

04 — Sourcing
Tomás Bengochea, our green buyer, flies four times a year and comes home with contracts written in front of the people who grew the coffee. We publish what we paid, in full, every February. In 2025 our average FOB price was $4.15 a pound — about 2.6 times the C-market — and 91% of our lots came from a farm we had already bought from.

05 — Wholesale
We have supplied cafés, bakeries and one very good hotel lobby since 2015. Wholesale here is not a price list and a pallet — it is a person who answers the phone, a recipe card for every lot, and a standing offer to come and re-dial your grinder when the weather turns.
Trade pricing from
$13.20 / lb
Ankeny Blend, five-pound bags, ten pound weekly minimum. Single origins from $16.40. Delivery is free inside I-205 and flat $18 to the rest of Oregon and Washington.
Ten pounds a week, in any combination of coffees. Below that you are better served by our subscription — no hard feelings, and we will still dial you in.
Wholesale roasts Monday and Thursday. Orders placed before 2pm the day prior are on your bench within 48 hours inside the Portland metro, and 72 hours anywhere in Oregon and Washington.
We will spec a grinder and a machine to your volume, install it, and put you on the schedule of our service partner, Ridgeline Espresso Repair. We do not sell hardware at a markup.
Yes. Two half-days at the roastery for your opening staff, a dial-in visit within your first fortnight, and a standing invitation to the Friday cupping for as long as you pour our coffee.

The flight log
Twice a month at the very most. What arrived, what it tastes like, what Tomás paid for it, and the occasional brew recipe that actually works on a kitchen scale.
